Waterproofing some ply for the floor intend to fiberglass mat to both sides, is it advisable to use the more expensive epoxy resin and associated mat or is it alright to use the polyester resin and associated mat.

Polyester is fine steve.

99% of boats on the water are made of the stuff ;)
