Hi dunc
Well when I use to catch Beach worms on the Central Coast down around the Gosford area or up here in Qld I always found it easy to just grab an old pair of the wife's Stocking (don't grab the new ones or it's your Ball's nail to the wall) trust me :P ;D
Grab some old pilly's or Mullet Frames (smelly of Course) hit the beach about the last 2hrs of the runout tide you will need to cut the toe out of one of the stockings for the use of tie to hand in this one put a piece of pilly squashed in it when locating Worms put feet either side of worm and keep the hand just above worm let the tide bring them up to grab the piece in hand then lift just enough to get the Worming piler on them will take time to master but patients is the name of the game when worming remember treat them with tender care or you will lose the body and be left holding the head the other way is to go to where you know the the older blokes are catching them most of the old fisho's will show you what to do hope this helps ;D ;D
Cheers ;D ;D

Dunc,
Sorry to tell you mate but catching beach worms isn't one of those things that can be taught via a text book.
It's pretty hard to leanr and takes practise practise and more practise. My first worm took 2 years to pull and after many more years, I can do it ok.
Best bet is to find someone who knows how to do it and sit and watch time for a while and pik up the knowledge from them.

2 years.........................that's one hell of a long worm ::) :o :P
I take about 3 seconds to pull the worm and 15 minutes to latch onto it's head in the first place. :P ;D ;D

cheers.

Catching beach worms is all in the timing.
You have to understand how the worms feed.
I've been catching beach worms by hand since I was 9, and once you understand this you'll have access to the best beach bait ever, jewies and tailor cant resist a big fat beach worm.
JB is only partially right, the deal is not to stake the bag. but to sweep across the where the surf wash recedes.
You'll see the worm heads rising out of the soft sand (about 5-10mm) where the bag is swept.
If you look at a beach worm head you'll see it's got small hooks, and the worm feeds by fastening on to pieces of floating food, then ripping off a piece.
The worms do this by rippling their bodies up, they fasten on to the feed, arch their heads slightly, then ripple their bodies down into their holes, the bigger ones get up to 2-3 feet down into the soft sand.
When you detect a worm patch, have a small piece of fish flesh ready to get in close to where the heads appeared, and hold the fish flesh lightly on the sand and let the water wash towards the worm head, wait until they hook on and are in process of arching, then grab them with either fingers or pliers and lift out.
You have to get them on the upwards movement, or else you'll break the worm, the movement down is very strong, and don't forget how deep in the sand they are buried.
Just take enough for your sessions fishing, the fresher and more alive, the better.
