Broiled Mud Crab in Black Bean Sauce
Chef: Barry Clarke


Degree of difficulty: Low
Cooking time: 15-18 minutes


You need:
1 Green Mud Crab
2 Cups White Wine
Butter
1 Chopped Spanish Onion
1 2" Piece Fresh Ginger, Peeled and Grated
Black Bean Sauce or Black Bean and Ginger Sauce
Freshly Ground Black Pepper
Heavy Duty Aluminium Foil

Method:
Place the mudcrab into the freezer to euthanise it, then remove the carapace, and clean under running water, removing the "fingers" and all entrails.
Crack the main claws, and divide the crab into several pieces.
Take 2 pices of foil about 750 mm long, and place on top of each other. fold foil into a bath-like shape.
Place crab pieces into the dished foil and pour in the white wine.
Place 1 tablespoon of butter onto the crab pieces, the grated ginger, and a liberal dash of black bean sauce, and top with the spanish onion.
Fold the foil over to form a seal, and place onto a hot barbeque plate and cook 15-18 minutes.

Serving suggestion:
Cool the crab on a serving plate and pour the juices over.

Wine suggestion:
Chilled Semillon

This recipe can only be made with fresh crabs in the shell since the shell has to protect the delicate crabmeat during the stir-frying process.

3lb freshly cooked crab in the shell
2 tbsp oil preferbly groundnut
2 tbsp black beans coarsely chopped
2 tbsp garlic finely chopped
2 tbsp fresh ginger finely chopped
2 tbspspring onions finely chopped
8oz minced pork
1 tbsp dry sherry or rice wine
400ml chicken stock or water
1tsp sesame oil
2 eggs beaten

Remove tail flap, stomach sac and feathery gills from the crab use heavy knife cut the crab shell included into large pieces.
Heat the oil in a wok or large frying pan. When it is hot add the black beans, garlic, ginger and spring onions and stir fry quickly. Then add the pork and stir fry for one min. Add the crab pieces and the rest of the ingredients except the eggs and sesame oil. Stir fry the mixture over a high heat for about 10 mins. Combine the eggs with sesame oil and then mix this into the crab mixture, stirring slowly. there should be light strands of egg trailing over the crab mixture.

thanks guys will let you know how they go. Oh Lachie broiled means cooke above the heat as in steaming or a few inches over the heat

Hey guys I am with Lachie when it comes to checking the web for recipes.

A good search engine is www.anzwers.com.au. Type in what you are looking for, in this case 'Crab Recipes' and you will be amazed at what you can find. The good thing about Anzwers is that you can just search Australian sites.
