how do i make damper and how do you know when its cooked well enough....and thanks to everyone for the beer batter recipe ..i tried all of them...that was great......BIG THANKS

I have bought up an old post on Damper recipes. They are many and varied and while the basic recipe that I started that post with is one I have always used you will find that everyone has their own favourite.
The pic below is what I call an Italian Damper. I used the basic recipe but threw in a handful of cubed tasty cheese and a sprinkle of Italian herbs. On top is a sprinkle of grated cheese and some chopped olives.
Just about a meal on its own but great with spaghetti bolognaise.
To test if your damper is cooked, lift it out and tap the bottom. It should have a hollow sound.

This is the real damper, real coals,real camp and if I take the camp oven lid off real smell, just teasing Derek did you get the other pics. Should have been with us.
