I am a camp oven cooking freak and always keen to try something different. How about sharing your favourite damper recipe.

The one I use is for every cup of self raising flour add a teaspoon of baking powder, throw in a good pinch off salt and mix in milk until you have a sticky but firm dough. Into a hot camp oven for between 20 and 40 minutes depending on the type of coals. Don't cook it too quick or it will be brown on the outside and gooey in the middle.

You can add variants to this. Things like a handfull of grated cheese or a handfull of sultanas. What about a handful of raisens soaked in rum overnight.

Camp cooking is easy and fun.

Same recipe but throw in a bit of Italian herbs or crushed garlic or both or another variant to that raisen recipe is raisens,tablespoon brown sugar and a pinch of cinamon to taste-raisen bread mate,beautiful.

To make an Italian variation you can sprinkle chopped dried tomato, salami, grated cheese and oregano on top.

Hi Derek,
Saw a recipe that uses plain flour & a can of beer (for yeast).

Have you tried this one. Was meant to be used if SR flour wasn't available.

sounds pretty good,Ill give that one a go.With the smell that gives you it could be an insect repellant aswell lol

Yeah, can't say enough about camp ovens, roasts and damper!


I normally keep it simple:
SR flour
Beer
dates/rasins
salt


when cooked, cover it with enough butter to run down your arm.

hehe

I find the old recipe of 2 cups of SR flour, a can of lemonade and a carton of long life cream all mixed up a beauty,,,, Easiest scones / damper ever...
