I have a fish smoker and was wondering what your favourite recipe/ techniques for smoking fish are. [smiley=chef.gif].

Gday Pig!

if you have smaller fish, or medium size fillets, I like to soak them in a brine with some cajun seasoning for an hour or so, then pat them dry, and give them 20 minutes in the smoker with bluegum chips. Really, just experiment and enjoy!!
