O.K., I can't put it off any longer! Derek, what is the recipe for those "Pumkin Fruit Muffins" you have in your avatar? Every time I see a post by you and see those things, I say to myself, "Those look like they'd taste good!" If you have the recipe, would you mind posting it for a big fan of all things pumpkin? ;D

PUMPKIN FRUIT MUFFINS
INGREDIENTS (Makes six large muffins as seen in the pic)
1 ½ cups of self raising flour
½ teaspoon salt
¼ of a teaspoon of nutmeg
¼ of a teaspoon of mixed spice
½ cup sugar
½ cup sultanas
1 egg
½ cup olive oil
½ cup cold mashed pumpkin
½ cup milk
METHOD
Mix together the flour, salt nutmeg, mixed spice, sultanas and sugar. In a separate bowl beat together the egg, oil, pumpkin and milk. Combine the ingredients but don’t over mix. Put paper muffin cases into the muffin pan, you can buy these from a supermarket and they come in their own little container, and fill them evenly using all the mixture. Place the pan on a rack in a preheated camp oven. Place oven on a bed of coals with more on top. If you have good hot coals, they should take around twenty minutes.
(For you city slickers use your electric oven at about 180/200 degrees)

Just had my first taste of the famous pumpkin muffin and "Woo-Hooooooo!" Tasted great Derek. Lucky for me, I had all of the ingredients. I passed them out to everyone and they liked them too. Thanks for the recipe. I made them in the kitchen stove but I can't wait to try them in the Dutch oven (camp stove). I bet they are great on a camping trip, especially on a cooler day.
These will be served on "Thanksgiving Day" to many, many people. My list of pumpkin recipes grows larger! YES! ;D

Rest assured Derek, you'll be given full credit for the recipe. There won't be any royalties though. I'm not selling any, just one of those giant Thanksgiving Day family get togethers where everyone is required to bring something to eat or drink or they throw you down the front stairs and forever label you a no good, free-loading mooch! ;D ;D ;D I still have the bruises from last year's trip down the "stairs of shame" (apparently, a half-eaten bag of potatoe chips and three cans of diet cola aren't considered enough), but these awesome muffins of yours may just bring me back in good standing. Fingers crossed! ;D ;D ;D
