Started typing this one last night on my tablet and got halfeway through and the tablet shyte itself / froze and that was it!! Finito kapoutta Lamousika lol.
Anyway here goes again:)..
Several weeks back i was watching some cooking show where this travelling Chef whatever his name was??, was in Spain and caught up with some owners of some well to do resturaunt and think it was a Familly affair .
Now one of the main dishes they cooked was lamb Shoulder and cooked in the oven as my Mom used to do (God Rest Her Soul) and did use her recipe on occasions whilst doing some cooking in my "Working on Dredge days :) ".
Now whilst squizzing through this show they added a little bit of a different spin to the recipe , mainly using wine in the dish beside water,& Olive Oil and thought !!! "Feck, wander how that one would go in the Webber??" and did it as follows..Mindyou only the shoulder needed but i went ahead and bought hale a young lamb and had it cut Shoulder,belly and chops and the leg seperately for simillar raosting.
Lamb shoulder spiked in several areas and suffed with a garlic clove in each pocket, rub well with crushed Oregano leaves and whatever other rubs take your fancy and let sit for some time till you get your webber started etc.
Place the shoulder in a foil dish large enough to hold size of shoulder (younger the lamb the better) pour aprox halfe to three quarters of a glass of water to the bottom of the tray , third of a glass of Olive Oil and a hlfe to three quarters of a bottle of a nice white dry wine..
Do add as many small button mushrooms or whatever ya call them , baby carrots ,small onions peeled offcourse along with however many halved washed spuds you can fit in the remaining area of the tray.
I only added a few mainly because i had spuds and corn wrapped in foil on the side ( if you have a seperate webber you can do these in that one to speed up cooking time).
Wrap tray with foil for the first hour and then remove foil to brown the shoulder lamb a tad .
One thing to watch out for and one that i partially got caught with was keeping a spare lot of charcoal lit up halfeway through the cooking process to stop the temp in the webber dropping as the charcoal coals diminished and the other was too many wrapped spuds and corn in foil around the tray will drop the heat some due to less air circulation through the coals and webber.
The small mushrooms and carrots absorb the juices and wine and are something else i can assure you ey:).
Also use the juices in the tray for gravy if you like your gravy..

Weber Q are great gas BBQ’s. I have the Family Q.

Weber are a excellent company for customer support. Any problems, call em up and they will see you right. 10 year warranty on the Q’s. Plus spare genuine parts are very reasonably priced if you ever need them.

I’ve got a few Webers ......

2 x Weber Kettles (full size)
1 x Weber Smokey mountain (mid size) smoker
1 x Weber Go Anywhere.

I would use the Q and one of the Kettles several times a week. The WSM every month.

If you like Buffalo wings, get yourself a Kettle Kone and some lump charcoal into a kettle, and get them wings on! We do them at least once a week, I like them tossed in Sweet Baby Ray’s Kickin Bourbon sauce.

Oh and its Weber, not Webber. Rookie spelling mistake!

The guys over on the serious BBQ forums will put shit on you big time for calling them a Webber LOL!

Totally agree with you Moonlighter. We purchased our Weber Summit Charcoal kettle last year and cook / grill / smoke / roast all our meats / pizzas / pastries every week. It has changed our dietary habits and improved my cooking skills. Yet to try a whole fish, but hopefully will try a jewie or theadie this summer. Cheers SS

Check the Weber Au website recipes.

I have done their Vietnamese snapper a couple of times, really tasty. No reason it wouldn’t work with other species.

Another big +1 for Weber products and most importantly service.
I had a Weber “Flat Top” for years and it was still working beautifully as I “walked out the door” so to speak.
I did phone up for parts a couple of times expecting to pay and was told each time that the parts would be shipped to me free of charge.
I only had issues with mud daubers nothing to fault the BBQ about.
Many times I had all 6 burners working hard to feed a party.
Very sturdy product

Ok, well mines the Gas one, not the charcoal version, Hmmm, I may have to be tempted in getting one of those Puppies !.......

Still finding my feet with this one, but I can feel the pull towards some more serious cooking time.......
I'll tell ya what though, Sundays Lamb rack was beautiful, but geez it's the best way to do roast Tatties and the like, now they were delicious :P.

I've got a wee smoker I usually do all the Aussie Salmon in, but never smoked meat,,, But I think I may well be looking into this.

If you watch Gumtree etc you can sometimes pick up a used Weber kettle for a decent price - but have to be REAL quick cause there are crazy collectors out there who will try to gazump you with the seller. Just make sure its a genuine Weber.

My wife even spotted a gnarly old red one on the kerbside cleanup a few years ago and grabbed it.

I took some time to clean it up and restored it with some new parts from Weber and some bits I had sitting around from other old kettles.

It had some bad crazing on the sides and a few dings. But I got it glossy shiny inside put a new grill rack in and cleaned the legs etc up and put her all back together. Got some new charcoal baskets from the Weber shop. The kettles are coated in a super hard baked gloss enamel inside and out, so going over them with a razor scraper gets rid of built up scum etc then we use fine steel wool to polish them up like new.

Once it was finished I gave it to my nephew, told him it was a “ratrod weber”.

The young folk these days go nuts over old stuff or even new stuff that is made to look old and weathered. He was absolutely wrapped with it. And of course it was pristine inside where the cooking happens anyway.

Weber actually have an excellent “how to restore your kettle” on their webpage.

If you want to do some smoking one of the nicest things to use is dry old banksia cones. They give a great mild “billy tea” smoky flavour.

For the gas Q’s one of the best accessories is the pizza stone and pizza trays. Put the stone in get it nice n hot than on with the pizza on the alloy tray. 12 minutes on high or med high and youve got great home made pizzas. I use Afghan flat Soda bread for the bases it works great and cheap as chips.
