I have been experimenting with sausage rolls. In particular, seafood sausage rolls.

The first 2 attempts were dismal. Next went OK, and now they are good, but not great. I will get there.

Below is a recipe for getting the shine on the top of the pastry.



For this result:
Make an egg wash with:

Shiny.............whole egg, salt


Faint Shine...........whole egg, milk


Matte, golden-brown..........whole egg, water


Shiny, golden-brown..........egg yolk, water


Shiny, golden-brown.............egg yolk, salt


Shiny, dark...............egg yolk, cream


Crisp, pale.............egg white


Matte, golden-brown ................heavy cream or half & half


Faint shine, golden-brown ......................... olive oil

I didn't know you caught that much rubbish fish to warrant making sausage meat out of them!

Or are the Red Emperor Rolls?

Red Emporer Rolls....... that, young Jim, has a nice ring to it.

I haven't been using the " good " fillets for the experiments..

We'll call them... The Happy Hussars .

Yes.

I have a SeaFood Sausage Roll that tastes good, has a nice " sheen " to it, and does NOT repeat on you for 2 days after eating !!!

BTW, I have also nailed a Tartare Sauce to go with it. I think the addition of Capers make it a stand out !!
