Personally i use a Tramontina Filleting knife or a dexter russell knife, I only use Cotton gloves when i clean, i dont like the mesh gloves, I get them in bulk from ATS nets and ropes.
Look for the knives on ebay,

Best whiting knife I have ever used is the very narrow, thin but fairly stiff Wilkinson Sword filletter that came out near 20 yrs ago, still got it in the shed somewhere. Holds a razor edge for eons, but a real bitch to get sharp again being so bloody hard. By far the best small fish knife I have ever used.

Thanks for that. Yes old fishing knives were good.

Try the old bone handle table knives that you can still find at the opp shop or garage sales. The steel in them is superior to anything on the market now and the blade is the perfect size for whiting. The best part is they are cheap.

Fdick 8" half flex or a victorinox.
The knife shop at stafford is cheap.

maybe not the very best but a very good knife just the same is the global knives. they hold an excellent edge and will last you a long time if looked after. i brought mine about 15 odd years ago. unfortunatley i snapped it just reacently, due to no other fault than mine. cost back then around $80, not sure of todays market value.
