Filletted up yesterdays catch this am and by the time I got home tonight they were ready to go
She made it up on the run but try this out.
In an oven tray put olive oil, a few cloves of garlic,some fresh dill, some lemon pieces and salt and pepper and heat it up well on high heat in the oven to get all the flavours into the oil, You can do the chips at the same time,then lower to about 180.
Brown both sides of the fillet, peferably on a griddle type pan to give the brown lines.Do it hotter than you would normally cook the whole fillet. The fish will be about half cooked.
Place fish on to the oil and into the oven to finish for 10 to 15 minutes,
The fish will stay tender and very moist
Serve with the dill still on the fillets.
