This is a recipe from Vietnam the fish really is nice cooked this way.
1 fish cleaned and scaled
20 rice paper wrappers (15-20cm) follow directions on pack. These are done at the table by each person when making their roll.
100g each of mint and thai basil ( you can use normal basil )
450g fresh rice vermicelli or 300g dried rice vermicelli scald for about 5 minutes)
lettuce of your choice
1 large cucumber cut into match sticks 10cm
1 carrot peeled and match sticks 10cm
Chives cut into 10cm lengths
1 cup of bean sprouts
1 litre of cooking oil
1. Wash fish well. Use paper towel to dry
2. Pick the good leaves of the mint, basil and lettuce and wash and drain them well. Arrange all vegetables on a plate
3. Heat oil and large non-stick wok. When the oil is hot add fish and cook till golden brown over medium heat. when one side of fish is golden brown turn over to cook other side, be careful not to over cook and dry out fish. Once cooked take out of oil and put on paper towel to remove excess oil.
4. Put fish on plate.
Each person makes their own roll at the table by adding some of each ingredient.
Dipping sauce: Chilli-garlic fish sauce or Mixed anchovy sauce go well with these.
