Some yaks are designed to track well and have the right rocker to handle surf better. There are sone fins you can fit depending on your design that may help broaching which is what you are experiencing. Look up the yak forums and your brand of yak as many just aren't designed for surf style conditions

Mate just go with it. As un-natural as it seems the best thing you can do is let the kayak turn sideways to the wave and dig your paddle into the face of the wave to give yourself the best chance of staying upright. Fishing kayaks don't manouvre well because they are designed to be stable where a surfing kayak will handle well in the surf but be useless for fishing from. Probably the best solution is some of the glass fishing skis that move a bit quicker through the water and are less likely to turn side on when a wave starts taking control. Just make sure you have all your gear either leashed or stowed and rods strapped to the deck or stowed inside the hull. Having rods sticking up in the air out of rod holders is a recipe for disaster in the surf and can only end in tears if you roll your yak in shallow water and come out of the other side of the roll with 2 piece rods. I have tried to attach an instructional video as posted on A-K-F-F which might help also.

Flipping the Kayak coming back through the surf is all a part of the fun. Once you do it enough times you get used to it.......................I think.
