G'day
Anyone got any ideas for cooking croc? I'm getting some tail fillets, cooking for a lady friend, marinate in something, spice is good, any suggestions?

At the Barra Bounty we get it every year
done in a mild marinade and cooked on the bbq by the local croc farm (Koorana) they do it well
I find if you under cook it it is a bit chewy and if you over cook it it toughens on the outside and don't cut it too thick
my wife does a light ginger and garlic with twist of lime in finger size pieces or on a burger with salad, bloody lovely

Well, it's been cooked and eaten, and it did impress.
Pretty much got some roasted garlic dressing of paul newmans, added a bit more garlic to taste,. and a bit of mint, Mixed that all up and covered the fillets in it, let them sit and marinate for an hour.
Into the hot olive oil of the frypan, only a couple of minutes each side, this cooks very quick, much like fish.
Taken out, a bit more dressing on top, salad on the side and wash down with a bit of fresita.
Worked a treat
