I was fortunate enough on the last fishing charter I was om we trolled a lure out the back and caught a Bonito just as we rounded North Point on Moreton Island, My mate who engineered the catching of the fish said $#@!!&&% Bait the Chef quickly wisked it away and about 1/2 hour later bought out the very thinly sliced Bonito, some soy with an island of Wasabi, it was bloody beautiful, I have had it b4 with tuna but this was to die for, so next time you snag a Bonito on the way home......enjoy!!

Boy i've drooled over sashimi and other Japanese raw fish dishes, but as soon as it hits my mouth I just got to spit it out, it looks so nice as well
Guess i'm a curry and bbq man simple as that,..

some 10 years ago, a group of us from armidale, which included matt graham, chartered a boat from coffs harbour to chase some yellowfin tuna.. we all caught one each, and had a feed of yellowfin sashimi on the way home. (those of us who werent sea sick....)
the yellowfin was bled and a long wire was fed up its backbone. i assume that it aided the bleeding?
The long wire is used to kill all the nerves along the spine to reduce lactic acid build-up and stops the fish heating up internally due to the spasming.
