Christ knows what this will taste like :-/ I am baking a whole Snapper in Honey, Soy Sauce, Garlic, Peppercorns, Thyme leaves and Limejuice ;D
Anything to appease the good Lord (and the good Wife) on Good Friday
Would you have done it?? or stayed a bit more basic?

Hi GM,
I got a bit fancy the other night and cooked up some fresh Coral trout portions in herbs,garlic, chilli,salt and pepper and olive oil. I wrapped these portions in banana leaves and cooked them on the barby.
The criticism was that when you have a great tasting fish to begin with it doesn't need a lot of flavor enhancements to taste great.
So my point is if you have a nice table fish to begin with don't ruin it by adding to many other flavors.The snapper would probably be lovely with the basic salt and pepper.
But then you never learn unless you experiment so good luck and i hope they enjoy it.

Few chilli's, some pineapple, onions and some ginger in it's gut hole would have been good too.
Mmmmmm starting to dribble. Wonder what the cooks doing tonight???

I didnt slice the skin, so the flavours were very mellow, and very appertising.
