About a week ago I decided to pull a flattie out of the freezer, and having had a busy week, found myself a bit light on for something to go with it! (Yes.. I had intended to do my grocery shopping that day, but... you know how it is... so little time and so much fishing to be done!)
Getting back to the point.... I ended up with one flattie, 1 onion, some olive oil, salt, pepper, tarragon, and a bottle of sweet chillii sauce......
Being a chilli fan I opted to simply fill the gut cavity (fish was whole) with the sweet chilli and onion, throwing in a good sprinkle of tarragon as well..
I used a little olive oil on the outside of the fish.. mainly so the alfoil would not stick and the tarragon I sprinkled on the outside would!
Wrapped in alfoil and into the oven for 12-15 mins...
In the end i was surprised to find that the taste was almost identical to Chilli mud crab....
One of the simplest and best flattie dishes i have ever made!
btw-- found the onion still sitting on it's own ! Forgot all about it!
