View Full Version : Moreton Bay Bugs with Orange and Onion

Sauteed orange and onions are a wonderful accompaniment to all BBQ seafood. Try this recipe and you'll know what I mean. (Serves 2)

6 whole green bugs, halved and cleaned
1 red onion, sliced
2 tablespoons olive oil
1 teaspoon ground pepper
2 oranges (zest from 1, juice from both)

* Combine onion, oil, pepper, zest and juice.
* Bury bugs into mixture.
* Cover and refrigerate 2 to 3 hours. Remove bugs.
* Scoop onions with zest onto hot BBQ plate.
* Place bugs flesh side down on hot BBQ plate for 1 minute.
* Turn bugs and cook, covered, for 3 and 4 minutes.
* Keep onions moving while cooking for 4 to 5 minutes.
* Remove bugs to serving plate and garnish with a pile BBQ onions.
