The unique flavour of Bundaberg rum adds an interesting nuance to any grilled white fish. (Serves 4-6)
1 kg whiting fillets, skinned and boned
1 firm but ripe avocado
MARINADE:
1/4 cup olive oil
1/4 cup fresh lemon juice
1 teaspoon brown sugar
2 teaspoons Bundaberg rum
Salt and pepper
* Shake marinade ingredients together in a jar.
* Pour over fillets and marinate for 10 minutes
* Drain fillets and place on lightly oiled grill tray.
* Top each fillet with a few teaspoons of finely diced avocado.
* Place under a hot grill for 2-4 minutes until just cooked.
* Delicious served with homemade potato chips.
