Sometimes the simplest things in life are the best. This delightful combination of traditional flavours proves the point. (Serves 4-6)
1kg wahoo fillets or steaks
Olive oil
Mayonnaise:
3 egg yolks
1 heaped tablespoon dijon mustard
2 tablespoons white wine vinegar
300 ml olive oil
salt and pepper
* In a food processor or mixer combine egg yolks, mustard, vinegar and salt and pepper.
* In a slow steady stream add olive oil with motor running.
* Paint a little olive oil onto wahoo and BBQ till just done.
* Serve wahoo with mayonnaise and a crisp green salad.
* Suggested flavour additions to mayonnaise:
-Chopped tomato, sliced shallots and tabasco sauce.
-grated orange rind and a dash of sesame oil.
-brown sugar, seeded mustard, and chopped dill.
-finely chopped anchovies and parsley.
