Traditionally, Indian tandoori is made with chicken or lamb. However, it's also a delicious and healthy way to cook fish. Tandoori paste is available at most large supermarkets. Cucumber raita is the traditional accompaniment to tandoori dishes. (Serves 4-6)
1 kg sweetlip fillets, skinned and boned
2 heaped tablespoons tandoori paste
2 dessertspoons hot mango chutney
lettuce leaves, sliced red onion and
lime wedges to serve
CUCUMBER RAITA:
1/2 continental cucumber, diced
1 teaspoon ground cumin
1/2 teaspoon salt
1 tablespoon chopped mint
2-3 teaspoons plain yoghurt
* Mix all raita ingredients. Set aside.
* Cut fish into narrow portions.
* Mix tandoori, chutney and oil in a glass bowl.
* Add fish pieces and move around to coat with tandoori mix.
* Using tongs, remove fish from marinade and cook on a hot BBQ plat for 2-3 minutes.
* Arrange crisp lettuce leaves and sliced red onion on a serving plate.
* Top with fish, spoon over raita and garnish with lime.
